- 1 tablespoon bacon grease
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 lb russet potatoes, peeled, dried and grated
- 2 tablespoons grate onions

Directions
Add half the bacon grease, olive oil and butter to medium skillet and heat until sizzling. Add potatoes and pack down. Reduce heat to medium and cook for 7 minutes. Lift out hash browns with spatula and put in remaining butter, grease and oil. Return hash browns to the skillet, uncooked side down, for 5 more minutes or until bottom is crisp and golden brown. Serve while hot.
Serves 6.
