Ingredients
- 1/4 cup bacon grease
- 1 1/2 cups yellow cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 large egg
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 3 scallions, diced

Directions
Preheat oven to 450°F. Heat bacon grease in large skillet in oven for 5 minutes. Mix cornmeal, flour, baking powder, and salt in a bowl. Mix egg, milk in a bowl, then add in all dry ingredients. Add butter and scallions to skillet and sauté. Add scallion mix into batter. Pour batter into skillet and bake for 10 minutes. Remove cornbread onto cooling rack for 15 minutes. Cut into 3/4-inch cubes and spread evenly on one layer in a shallow backing pan. Bake for 10 minutes then remove and cool. Great on salads and soups!
